Coffee roasted in Morlaix

Once in Morlaix, grinding and packaging are carried out in our workshop by a team of disabled people. Also carried out in our factory, the roasting process is adapted to the type of coffee, allowing all the richness of the different aromas to develop.

Coffee and chocolate: complementary flavors

Although chocolate has now largely taken over in terms of sales, Grain de Sail's original activity was coffee roasting, and it remains a pillar of the company. Our two flagship products reveal our penchant for gastronomy and everyday pleasures. After all, what could be better than a good cup of coffee with a square (or two...) of succulent chocolates?
Depending on your coffee machine, it is essential to choose the right grind, otherwise the quality of the coffee obtained will not be optimal.

Espresso grind

Suitable for manual Espresso machines, this is the finest grind available. The aim is for extraction times of between 20 and 30 seconds.

Italian grinding

Slightly less fine than the Espresso grind, this grind is suitable for Italian percolators (or “moka” coffee makers). Extraction time varies between 2 and 3 minutes.

Filter grinding

This medium-fine grind is suitable for commercial electric machines with filter holders. The brewing time is longer, approximately 4 to 5 minutes.

Piston grinding

This is the coarsest grind. It is suitable for French press coffee makers and Slow Coffee equipment (Hario, Chemex, etc.). Brewing time is between 4 and 5 minutes.

Final tip : If you’re not going to use your ground coffee quickly, don’t hesitate to put it in the freezer in the meantime, to preserve its aromas.

As we state on the back of our chocolate bar sleeves and coffee bags, currently only “some of our raw materials” are transported by sail, so not all our products are for the time being. Indeed, when the design of the 1st Grain de Sail ship was launched (in 2016) we were far from imagining that our products would have met with such success: over 330 tonnes of chocolate produced by 2021! Today, coffees represent a smaller portion of our sales than chocolate, so we have chosen to prioritize the transport of cocoa mass in order to meet the volumes required. As a result, a large proportion of our coffees are still shipped conventionally.

Our next cargo sailboat, currently under construction, is scheduled to enter service in 2024. It will be responsible for the entire sailing of our raw materials from Latin America. That’s why we’re changing the origins of our coffees, targeting mainly Latin American coffees, which can be transported 100% by sail, in line with our sailing routes.
